Porcini Gravy

1/2 oz. organic dried porcini mushrooms

1 T. sugar

1 t. salt

2 T. Soy sauce

1 T. chopped onion

2 T. butter

2 T. flour

1/2 C. white wine

1. simmer dried mushrooms in 2 C. water with the sugar, salt, and soy sauce for 20 minutes.

2. Saute the onions in chicken or turkey fat or olive oil in a pinch.

3. Add the flour and cook, stirring frequently, for a couple of minutes.

4. Add the white wine and boil until you can barely smell the booze — a couple of minutes more.

5. Add mushroom liquid and mushrooms (chop the latter if you’d like). Simmer until thickened.
Season with salt and pepper and serve.
