Mel’s Peanut Sauce

Mel’s Peanut Sauce (makes about 1 cup)

When our friend Mel comes to town, we usually go to one particular Thai place for dinner. Mel puts their peanut sauce on everything. This is a pretty close approximation of their recipe.

3 garlic cloves, minced

1/4 teaspoon dried hot red pepper flakes, or to taste

1 tablespoon vegetable oil

1 tablespoon tomato paste

3 tablespoons creamy peanut butter

3 tablespoons hoisin sauce

1/2 teaspoon sugar

3/4 cup water

Heat oil. Add garlic and red pepper and cook until garlic is soft. Add remaining ingredients and bring to a boil, whisking until smooth. Good tofu, if you’re a vegan like Mel, but also great on chicken, pork, etc.
