Homemade Limoncello

24 large lemons, washed (soak in mix of white wine vinegar and water to remove wax)

4 C. vodka

4 C. simple syrup (boil 4 C. water, add 4 C. sugar, stir to dissolve)
1. In a larger container that you can cover (I used a stainless steel stockpot), combine 6 1/2 C. of water with the vodka.

2. Using a vegetable peeler, remove the lemon zest in strips, avoiding getting the white part. Submerge strips in vodka mix. Cover and let steep in a dark place until the lemons loses most of their color, about four weeks.

3. Strain the liquid. Discard lemon strips. Add the simple syrup. Serve chilled, straight up.
