Bananas Foster

1/2 stick (4 T.) unsalted butter

1/2 C. packed light brown sugar

1/2 t. ground cinnamon

1/8 t. salt

4 ripe but not mushy bananas, peeled and cut in half crosswise then lengthwise

1/2 c. dark rum

Vanilla ice creatm

 

1. place first 4 ingredients in large frying pan over medium-high heat. Make sure the pan is going to be big enough to accommodate all your bananas. Cook, stirring constantly, until mix is bubbly and slightly thickened — 3-5 minutes.

2. Add the bananas cut side down (try not to crowd). Cook until bottoms are just coated with caramel, maybe a minute. Don’t cook too much because the bananas will get mushy and gross. Flip the bananas carefully.

3. Remove the pan from the heat, add the rum and let it sit for a minute or so to let the rum heat up. Light a match and ignite the rum. Let the flames burn off, which will take a couple of minutes.

4. Place the bananas on a serving dish and pour the sauce over them. Serve with ice cream if you want.

Nice ending to a meal if you like bananas. I don’t, but everyone else at this dinner did.
