Turkey Sloppy Joes

Just back from a conference. Dog-tired so am going to make lentils and fried eggs for dinner, because that’s all I got, but was thinking that if I had the ingredients, this is what I’d make. Quick, good, and pretty mindless. About 15 minutes start to finish, if you’ve got everything in your refrigerator.

Turkey Sloppy Joes (Serves 4)

1 lb. ground turkey (can use 1/2 white and 1/2 dark meat, or all dark, but all white is dry dry dry)

! 1/2 T. canola oil

1 onion, chopped

1 garlic clove, chopped

1 8 oz. can tomato sauce

1/8-1/4 C. brown sugar (depending on your tastes)

1/4 C. barbecue sauce

1 T. Worcestershire sauce

Salt and pepper to taste

Heat the oil over med-high heat until good and hot. Add onion. Saute for a couple of minutes until it starts to soften up. Add garlic clove and cook until onion is starting to brown. Add turkey. Cook until turkey is nice and brown and liquid is pretty much gone. Add other ingredients, season with salt and pepper, and simmer until the mix is nice and thick.

Good with coleslaw.
