Brown Rice Fail!

I never have good luck with things like potatoes anna or other starches that you form into patties and fry. Tonight was no exception. I set out to make brown rice patties, which just wouldn’t cooperate. So I did what any cook would do on a Tuesday night of what promises to be a 60 hour work week — I threw some olive oil in the pan and fried the hell out of the rice. Much to my surprise, the kid ate almost all of this brown rice fail, which turned out to be pretty damned tasty.

Brown Rice Fail (serves 4)

1 cup cooked brown rice (I did this a few days ago and just put it in the fridge)

4 scallions, chopped

1 C. parmesan cheese, grated

2 T. olive oil

salt and pepper to taste

Heat the oil in a nonstick or cast-iron pan over med-high heat. In a bowl, mix the parmesan, rice, and scallions. Add this mix to hot pan and let cook for about 5 minutes, until the rice is crunchy and brown on the underside. Stir and cook until the rice is uniformly crunchy and brown. Add salt and pepper to taste and watch it disappear.
