Ginger Pork Pitas

I wasn’t sure how to describe this, because Asian Sloppy Joes just sounded terrible for more reasons than I can count.

Despite the boring name, this is nice little sandwich — never leftovers which is also a very good sign. From Real Simple, which fyi usually has pretty uneven recipes.

Ginger Pork Pitas (serves 4)

1/4 C. rice vinegar

2 t. sugar or agave syrup


1 jalapeno, sliced thinly

1 English cucumber

1 T. olive oil

1 lb. ground pork

1/4 C. hoisin sauce

1 T. freshly grated ginger

4 pitas

In a bowl, combine the vinegar, sugar, and 1/4 t. salt, stirring until sugar dissolves. Add cucumbers and jalapeno. Let sit, stirring now and then, for 15 minutes or so.

Heat the oil in a skillet over medium heat. Cook the pork, breaking up with a spoon until it’s not pink. Drain fat from pan (I usually just use a plastic colander set over a bowl). Return meat to pan and stir with hoisin, ginger, and a couple of tablespoons or more of water.

Fill the pitas with pork and cucumber salad. Tasty! Better still, fast!
